This was puff pastry with gorgonzola, walnuts, pear and a drizzle of maple syrup. Delicious but after you’ve eaten them 3 times in 5 days, it’s enough

Hi Andy – Pear and gorgonzola are two of my favorite ingredients together – we make a puff pastry with pear, gorgonzola, fig sauce and brie. Delicious.
I am going to check out that book you mentioned.
